In the late 70's I lived in San Francisco and remember using Eduardo's Pasta for my favorite Fettucine Alfredo. Everyone loved it then.
Just recently I saw the dicumentary on the change in ownership team and how the pasta maker and integrity of the product remains the same as it did back when.
I made a great Alfredo over the weekend with just butter, heavy cream, parmesian and salmon! And I've been giving friends and relatives packages of Eduardo Pasta that I've been easily ordering online along with a little of my history!
About 10 years ago I went on vacation to New York City. I went to the Italian restaurant next to the hotel. They had a special that night. I have never been able to remember the name of it, but I have never forgotten the taste. I have been trying to find a recipe that comes close. Every restaurant I have gone to, I have tried to find it. When I made your pasta, I just stopped. My mind and mouth recognized the taste. It was IT! The same texture, eggy, and subtle nutty flavor. Absolutely delicious!
