The dinner
Short ribs braised low and slow until they pull apart, then folded into a ragu. Wide pappardelle holds the sauce. The Sangiovese has the acidity to stand up to a rich braise. Plan on an afternoon for the braise; the rest comes together while the pasta cooks.
